Wow, smiles's pictures of the Marukkhathaiyawan Palace are nice, the palace is fantastic you could have fun with some paint there.
Be careful where you stay around Hua Hin. I stayed stayed in a charming little guest house all bamboo and stilts but the stench from the fish paste industry and drying shrimps was over bearing. Its all very low key industry so looks all very interesting but the smell was unforgettable.
There is a cheaper resort outside of hua hin I do not know name

By the way, thanks to the guy who mentioned the AsiaRooms.com website. That was a new one on me and the quoted prices seem very good there.
Noticed there: The Chom View Hotel appears to be a very good deal for a hotel right on the beach (though I'm making the comment from photos only ~ often risky! ~ as I've never stayed there). It's located out of town a ways (about 2-3 miles by the looks of it), but there is a song taweo service along that road which will get you into Hua Hin quickly.
If you really want to rough it (and save money!) you could try the Pattana Guest House. Quite basic in a grouping of old-but-authentic Thai houses, it's smack dab in the middle of town in a small alley/Soi and close to all the restaurants and sea food places on the beach. But ay Pattana you'll get only cold water showers ( " ... Thai people not use hot water... " she said with a smile. " ... Bullshit ... " I said under my breath, with a smile), a small room with no closet, ceiling fan only, and thin walls. 200-400 baht a day.
But the breakfasts (extra) are to die for, and the ambience in the garden courtyard restaurant is quiet, and quite romantic.

If you want a real "Out of the Way" experience, try Bacchus Home Resort. Myself and two straight Thai friends went through several web-sites in January before we located Bacchus which was the only place with vacancies. It advertised itself as a "Huan Hin" hotel but it was located a good 40 km from town in a really isolated place. Not a Thai face in sight but tons of farang families with children. The place did have a swimming pool and access to an almost completely deserted beach. Also, since the hotel was in the middle of nowhere, the restaurant had the monopoly on farang and fake Thai food at airport prices.
Not my cup of tea....
I actually stayed with my mother at the Sofitel.
Got two great suites for the price of a two normal deluxe rooms.
Lovely breakfast and great rooms.
After mother retires you may like to walk around the boundaries of the hotel - 2 very nice guards there who went beyond the call of their job description!
