The only buffets I avoid like the plague (for fear of the plague) are indian buffets. I love indian food but not in a buffet-type presentation. When they use the serving forks and spoons I can't but remember that it's their custom to use one hand for eating and the other for a related fuction.
Try the Oishi Grand when it reopens in Paragon. It is closed now but should reopen in July in its new location.
You might be better off with a quick check of tripadvisor or other generic travel site for all the options. I am pretty sure I saw some detailed conversation there (or at a similar site) with comparisons of all the options for Bangkok breakfast buffets. Seemed to be quite a luxurious spread in some of them with options for accompanying champagne.
I don't have any Bangkok experience. I have stayed at the Marriott Pattaya several times and their buffet breakfast is very satisfying. Nothing overly high-so, but cooked to order omelets, fresh fruit, bakery items, meats, etc. etc. etc. Also several selections from several different cuisines (Japanese, Thai, Indian) Also included unlimited (good) coffee and juices. They list price it at 650 baht, though it was provided without cost for frequent Marriott guests. I would think you could find a very nice place in Bangkok at the 1000 baht level.
You might try the Baiyoke Sky Hotel buffet. It has great night views of the city. I believe it runs around 750 Bt.
I had lunch buffet with a Farang friend at Majestic Grand and S31 (both Sukhumvit, both his idea) around 500 Baht on weekdays, and we were both happy with the food.
If you are going to spend 1000 Baht, it will have to be spectacular location or luxury (caviar, champagne, oysters).
