You can observe the entire process (live chicken and other poultry converted into ready to prepare a meal of it) in the Khlong Toei market (a bit east of the subway station of the same name). It's all done by hand, the chicken are put into drums that obviously contain some gas that kills them, at least they come out dead or unconscious. Than they are boiled in large pots that are heated by open fire and stirred by shirtless young men and finally deplumed and cut into pieces. All this takes place on less than 10 meters. The market is open all around the clock.
